Deep dish cookie pies

Do you like chocolate chip cookies? Do you like ice cream? Do you like ooey-gooey chocolate chip cookies and ice cream? Then I have the perfect dessert for you.

Yes. Yes I do.

Deep dish cookie pies are a like extra-thick, gooey cookies served warm from the oven with ice cream melting over the top. They are delicious. You want one. I know you do.

Deep Dish Cookie Pies
Inspired by this recipe; cookie dough is based on my favorite Cook’s Illustrated recipe

2 cups plus 2 Tbs all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
12 Tbsp (1 1/2 sticks) unsalted butter, melted and cooled slightly
1 cup brown sugar, packed
1/2 cup granulated sugar
1 egg, plus one egg yolk
2 tsp vanilla extract
1 1/2 cups semi-sweet chocolate chips
vanilla ice cream

Preheat oven to 325°. Sift the flour, salt and baking soda together in a large bowl and set aside. Mix the butter and both sugars together in an electric mixer until well blended. Add the egg, yolk and vanilla and mix well. Gradually add the dry ingredients and mix until just combined. Stir in the chocolate chips.

Fill as many small ramekins as you like 3/4″ deep with cookie dough.* Set the ramekins on a baking sheet and bake for 18-20 minutes, or until the tops are slightly golden brown.

Place the ramekins on individual plates (they’ll be hot) and top with a scoop of vanilla ice cream. Enjoy while warm.

* The cookie dough recipe makes lots more than you’ll need, so freeze the rest!
