When we had our going-away party recently, there was plenty of food planned for the adults. The better half wanted to grill ribs and sausages (all the better to use up a bunch of roasted sweet peppers from the freezer!), and along with veggie burgers, salmon, assorted appetizers, and my truffles, that was more than enough for an afternoon get-together.
However, we also had a substantial baby and kid contingent at the party, so I had to brainstorm what to feed the little people. Along with some apple slices, I made some broccoli cheddar bites (always a hit), and tried out a new recipe for cheesy quinoa bites.
The recipe was perfect, since I wanted to use up some quinoa and frozen mixed veggies before we left, and the little ones (including Nora) seemed to like them.
I think they were a little too dense for her to bite into with her molars coming in (poor tender mouth!), so I ended up breaking them up into smaller “little bite” sized pieces.
Our mutual favorite is still broccoli cheddar bites, but these are definitely a contender, and who doesn’t like another recipe that you can freeze and heat up later for dinner?
Cheesy Quinoa Bites
Based on this recipe
1 cup quinoa, rinsed well
Frozen mixed vegetables (as many as you like, but at least a couple of good handfuls)*
2 cloves garlic, minced
1/4 cup chopped parsley
1/2 cup grated Parmesan or other cheese
2 Tbs all-purpose flour
salt and pepper to taste
Preheat oven to 350°. Add 2 cups of water to the quinoa and bring to a boil. Cover and simmer until the grain spirals out and the quinoa is done, about 30 minutes.
Mix the cooked quinoa with the remaining ingredients. Form the mixture into small balls using your hands, and place on a greased or parchment-lined cookie sheet.** Bake for 15 to 20 minutes.
* I used Trader Joe’s Organic Foursome (peas, corn, carrots, and green beans), but you can use any you like, or fresh veggies.
** You can also use a mini muffin tin, if you have one. I don’t, but I’m starting to think I might need to invest in one once we get settled into the new house!
