We discovered at our neighborhood 4th of July celebration that Nora loves watermelon. Loves it. Like, give her her own personal watermelon and watch her go to town kind of loves it.
This discovery led the hubby to purchase a watermelon for her, and it was only fair that she share with Mommy and Daddy, too! Combine that with some coconut milk left over from making popsicles yesterday, and that’s how watermelon-coconut frozen daiquiris were born.
After sampling the initial mix, we both agreed that the flavor was a little shallow, so we brainstormed how to fix it. A little salt did the trick — who knew?
Watermelon-Coconut Frozen Daiquiri
5 cups watermelon chunks, seeds removed
4 cups ice
4 oz coconut milk
juice of two limes
10 oz rum
salt to taste
Combine the watermelon, ice, coconut milk, lime juice, and rum in a blender. Pulse until ice is crushed, and blend well. Add salt to taste, and pour into glasses to serve.
