I have a hard time coming up with ways to use all the cucumbers we’re getting in our CSA box these days. I do love a nice gimlet, though — so Cocktail Thursday to the rescue!
I made a similar drink with basil last summer, and it was yummy, but this is even better, in my humble opinion. Mint grows in our garden almost as well as basil (the basil plants are monstrous this year), so why not?
This cocktail is sweet but not cloying, cooling, and minty — perfect for a warm summer evening. And yes, it is definitely still summer here, even if people are talking about Pumpkin Spice Lattes and sweaters in other parts of the country.
Cucumber-Mint Gimlet
3 oz. vodka*
1 oz. simple syrup
1 oz. lime juice
5-6 slices peeled cucumber
a good handful of mint leaves
Drop the cucumber and mint into the bottom of a cocktail shaker and muddle well. Add ice and the other ingredients and shake well. Makes 2.
* I like Tito’s Handmade Vodka, but whatever you use, make sure it’s good quality.


And the more you drink, the fewer grow the cucumbers. Win win!
